banana chocolate chip cookies

ifykyk, mello babes are active members of the silly little treat club. the babes who need a little something around post "regular" meals. each week I am sure to include a silly little treat in my meal prep. we aren't about saying things are "essential" here, but silly little treats might be one of the only non-negotiables at mello.


makes: 7-10 cookies

cook time: 10-14 minutes







the banana chocolate chip cookie lore you didn't know you needed...


it was a cozy friday night in -- I was in my pajamas, with a silly little drink in my hand doing a puzzle while watching Gilmore Girls. I know what you are thinking, such a perfect evening and yess it was, but something was missing: a silly little treat.


i leapt into full CHOPPED challenge mode and starting scouring my fridge and pantry to see if I had to ingredients to make something sweet. i start putting together most of the components for cookies but I was missing one thing: eggs. but it's 2024, the year of our lord and savior Chappell Roan, so just one 4 second google search later, I was staring down the list of egg replacements I could use.


now I know we love a decisive queen but, there was no decision to be made because the only thing I had on the list was a banana.


at this point i am fully committed to this treat and the stakes are high, ok? I mean in these uncertain moments I am at risk of disappointing the most important person in my life: myself. so, I had to do what anyone in this situation must do -- trudge on. I mustered all of the "f*ck around and find out energy" within me (which isn't as hard as I'm making it seem, I have a bunch of it) and see if this banana was going work.


and of course in all of this, I am being so dramatic. banana and chocolate is not some revolutionary combination. the internet said it would work but with baking you never know. unlike cooking, where you can adjust as you go, with baking you have to get your potion just right or it's going to come out bad.


twelve baking minutes and the even more excruiating 5 minutes "to cool" post oven wait time later...we are offically obsessed. I am not lying when I say, we haven't gone back really.



INGREDIENTS


  • 1 stick of butter (softened, not melted)

  • 1/2 cup sugar

  • 1/2 cup brown sugar

  • 1 banana

  • 1 tsp vanilla extract

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 3/4 tsp salt

  • 1/2 cup chocolate chips

  • 1 3/4 cups flour



let's get baking: banana chocolate chip cookies


  • preheat your oven: set that bad boy to 375°F (because cookies deserve to be baked at the perfect temp).


  • cream the butter and sugars: in a large bowl, mix 1 stick of softened (not melted!) butter with both the sugar and brown sugar until you’ve got a smooth, creamy mixture. you’re going for a texture that says, “I could spread this on toast if I really wanted to.”


  • banana time: add in that lonely banana and a teaspoon of vanilla extract. Mix until everything’s combined and it smells like you’re halfway to dessert heaven.


  • dry ingredients meet wet ingredients: toss in the baking powder, baking soda, and salt. mix it up like your life depends on it.


  • flour power: gradually add the flour and mix until you’ve got a thick, glorious cookie dough. It should be the kind of dough that makes you want to eat it straight from the bowl (but try to resist, raw flour isn’t the vibe).


  • add the good stuff: fold in those chocolate chips. and yes, fold them in—don’t be lazy. This is where the magic happens.


  • scoop and bake: scoop the dough onto a parchment-lined or greased baking sheet. you can go big or small here; no judgment. bake for 11-14 minutes until the cookies are golden around the edges but still soft in the middle. remember, slightly underbaked cookies are just gooey perfection waiting to happen.


  • cool (but not too long): let them cool for a few minutes—just enough that you don’t burn your mouth. but let’s be real, you’re not going to wait the full cooling time because warm cookies are life.
