on this episode of $10 or less dinners we are making lasagna soup. I love this recipe because it has all the amazing flavors you know and love, without all the prep and effort it takes to make a lasagna. I thought it would be a fun idea to make this recipe easy to modify depending on our preferences or budget.

lasagna soup
makes: 4 servings

Ingredients:
lasagna noodles: $1.50
pasta sauce: $1.79
chicken or veggie broth: $0.99
frozen spinach: $1.49
cheese of choice (see below)
optional:
zucchini (2): $0.85 each
mushrooms: $3.29
ricotta: $4.48
shredded mozzarella: $2.33
ground sausage: $3.99
Instructions:
cook the sausage and/or veggies - once cooked, remove from pot and set aside.
add 1 tb oil in the pot and cook garlic
add in entire jar of pasta sauce
fill jar of pasta sauce with water, add top and shake. pour into the pot.
add entire container of chicken broth & bring to a boil
break up lasagna noodles in 3-4 in squares
once boiling, add in lasagna noodles and cook for 10-12 minutes
adjust heat to low and add in spinach (measure with your heart and the knowledge that it will shrink a ton)
add in cooked sausage, cover and let cook for 5 minutes
pour into a large bowl and top with shredded mozzarella or a couple of spoonfuls of ricotta or both!
