Upgraded Grocery Store Ramen - $10 or less dinners

times are tough right now and we can all use a little budget friendly recipes. whether you are feeding yourself or an entire family, most of us need to keep it as affordable as possible. this series will include a a selection of easy dinners that cost $10 or less.
the logical first episode of this series was to "upgrade" the grocery store ramen packet. my thought process was to try and make this staple and crazy affordable meal a bit heartier and I think I did just that. The ground pork, corn, and perfectly gummy egg pack this soup with protein. Then adding the green onion and garlic powder to bring some extra flavor. I chose pork flavor but you could easily make this with your favorite store bought ramen.

upgraded grocery store ramen
makes: 4 servings

Ingredients:
5 ramen packets - $2.50 (.50 cents each)
1/2 eggs - $1.35
Green onion - $1.09
1 can of corn - $.88 cents
1lb ground pork - $3.18
optional: soy sauce - sushi section of grocery stoe has packets for free or approx. $2.99 bottle
sriracha - $3.29 bottle
Instructions:
In a large pot, add 1 tb oil or butter (sesame, if you have it)
Add in ground pork - season with salt and garlic powder, cook all the way through stirring occassionally.
chop green onion: seperate the white from green pieces.
fill a seperate large pot with water - bring to a boil
once pork is cooked, remove from pot and set aside. DO NOT CLEAN POT
add in white part of the green onions into pot with 1tb of oil or butter, stir occassionally.
open and drain one can of corn - once green onions are cooked, add in entire can of corn.
once water is boiling, add in eggs gently one at a time. set time for 7 minutes.
open ramen packets and add only the seasoning packet in with the corn mixture and stir
Once the eggs are done boiling, add the boiling water into the pot with the corn. be gentle as to not add the eggs, but if you do just scoop them out. turn heat up and bring to a boil.
add eggs to an ice bath for 5 minutes
Once broth and corn pot is boiling, add in ramen noodles and let boil for 2-3 minutes
lower heat and add back in the corn and cover for 5 minutes
remove eggs from ice bath and peel
add ramen to a bowl - top with green onions and if you have soy sauce and/or sriracha.
