edamame crunch salad jars with peanut dressing - meal prep lunch

this recipe is one of my favorite lunch ideas. there is something about a big salad for lunch that just hits for me. this salad has all the elements of an amazing meal: crunch, acid, spice - just so many good textures. this is something easy to meal prep for lunch or you can add it all to a large bowl for dinner or a side dish.

edamame crunch salad jars with peanut dressing

makes: 4 servings


Ingredients:


  • edamame (shelled)

  • ½ red bell pepper

  • ½ english cucumber

  • wonton strips

  • 1 head romaine

  • ½ bag cabbage coleslaw


peanut ginger dressing

  • ½ cup peanut butter

  • ¼ cup soy sauce

  • ¼ cup red wine vinegar

  • 1 tb chili sauce

  • 1 tsp fish sauce

  • 2 tb maple syrup

  • 1 tb sesame oil

  • 1 tb ginger (minced)

Instructions:


make peanut dressing

  • in large bowl or jar, add all dressing ingredients. 

  • mix together and then add 1/4 cup -1/2 cup slowly until dressing is your desired dressing.


prep salad jars

  • dice red bell pepper & cucumber

  • chop romaine finely

  • In 4 large/tall jars, add peanut sauce to the bottom of the jar

  • nexy add in edamame, then red bell pepper

  • next, add in mix of cabbage and romaine until jar is just about full

  • lastly, add wonton strips

  • add the top to all the jars and store in th fridge for 4 days


when you are ready to eat, dump salad jar out into a large bowl or plate. I like to add 1/2 an avocado and some sriacha to the salad.
