edamame crunch salad jars with peanut dressing - meal prep lunch

this recipe is one of my favorite lunch ideas. there is something about a big salad for lunch that just hits for me. this salad has all the elements of an amazing meal: crunch, acid, spice - just so many good textures. this is something easy to meal prep for lunch or you can add it all to a large bowl for dinner or a side dish.

edamame crunch salad jars with peanut dressing
makes: 4 servings
Ingredients:
edamame (shelled)
½ red bell pepper
½ english cucumber
wonton strips
1 head romaine
½ bag cabbage coleslaw
peanut ginger dressing
½ cup peanut butter
¼ cup soy sauce
¼ cup red wine vinegar
1 tb chili sauce
1 tsp fish sauce
2 tb maple syrup
1 tb sesame oil
1 tb ginger (minced)
Instructions:
make peanut dressing
in large bowl or jar, add all dressing ingredients.
mix together and then add 1/4 cup -1/2 cup slowly until dressing is your desired dressing.
prep salad jars
dice red bell pepper & cucumber
chop romaine finely
In 4 large/tall jars, add peanut sauce to the bottom of the jar
nexy add in edamame, then red bell pepper
next, add in mix of cabbage and romaine until jar is just about full
lastly, add wonton strips
add the top to all the jars and store in th fridge for 4 days
when you are ready to eat, dump salad jar out into a large bowl or plate. I like to add 1/2 an avocado and some sriacha to the salad.
