it's offically soup season babe and this tomato pesto ravioli soup is not only nourishing and warm, it's cooked all in one pot which means less dishes. I prepped this for lunch but this could totally work for a cozy dinner recipe too! The tomato pesto and fresh basil adds a fantastic depth of flavor with minimal effort.

INGREDIENTS
4 thin sliced breasts or cooked rotesserie chicken
1/4 cup chopped onion
4 garlic gloves
4 sprigs of fresh basil
1/2 cup heavy cream
1 jar tomato pesto
2 cups spinach
chicken broth
3 cups cheese ravioli
LET’S COOK
get that chicken going: If you're feeling like a kitchen queen today, go ahead and slice up those chicken breasts and cook them in a large pot with some avocado oil, salt and pepper.
you can also totally use a cooked rotesserie chicken instead of cooking the chicke from scratch - this was actually my favorite plan but my grocery store didn't have any chickens prepared.
let's get things started: throw the chopped onion into the pot with 1 tbsp butter and sauté it until it’s nice and soft. add in the garlic and let the smell fill the kitchen, giving off major "I know what I’m doing" vibes.
pesto party: dump the entire jar of tomato pesto into the pot like the boss you are. Stir it up until everything’s coated in that magical pesto goodness. This is where things start looking—and smelling—fancy.
broth it up: add chicken broth to the mix and bring it to a boil. once boiled, add in ravioli and cook per the instructions.
simmer time: bring heat down to low and add in heavy cream. after it simmers for 5 minutes, add in spinach.
Basil on Top: finish it off with fresh basil sprigs for that extra Pinterest-worthy touch.
tips for extra sass:
bread makes everything better: This soup screams for a hunk of bread to dunk.
parmesan shower: if you really want to impress, grate some fresh parm over the top. A cheese shower never hurt anyone.
leftovers = gold: This soup keeps well, and honestly, it gets even better the next day. You’ll be patting yourself on the back for meal-prepping like a pro.
