we love a vesatile queen - which in this case is a breakfast casserole recipe that not only makes an amazing meal prep but can be switched up to use any and all produce that "needs to be used today " iykyk :)
AND maturity is realizing casseroles are the star of the show: low maintenance cooking (you set it in the oven, put on the timer and binge watch something while it cooks) & minimal dishes.

why this breakfast casserole is a literal life saver
man, I am dra-matic... ok maybe it won't actually save your life but it will save you some time and wasted produce which in this economy comes very close.

INGREDIENTS
8 large eggs
½ cup milk (or dairy-free alt)
1 Japanese sweet potato, thinly sliced (because they’re slightly sweet and caramelize beautifully)
½ lb sausage, cooked and crumbled (pork, turkey, or plant-based—live your truth bacon also works)
1 cup heirloom tomatoes, chopped (cherry tomatoes work too!)
1 cup fresh spinach (because we’re pretending to be health-conscious)
½ cup crumbled feta (adds that salty, tangy kick)
1 tsp garlic powder
½ tsp salt + ½ tsp black pepper
½ tsp smoked paprika (optional, but highly encouraged)

this is MY version of the recipe but as I have stated feel free to swap out my choices for whatever you have in your fridge.
preheat & prep: set your oven to 375°F and grease a 9x13 baking dish.
roast the sweet potatoes: peel & chop the sweet potato and roast it in a baking dish with avocado oil, salt, pepper, garlic powder & sweet potatoes. bake for 20 minutes.
cook the protein: I used ground breakfast sausage and cooked it in the skillet until cooked all the way through.
whisk the eggs: In a bowl, whisk together eggs, milk, salt & pepper. Pour it evenly over the casserole, making sure everything is coated.
assemble the casserole: pull the sweet potatoes out of the oven. layer down spinach, then add in heirloom tomatoes and sausage. mix everything together and add in feta cheese on top
bake to perfection: pop it in the oven for 40-45 minutes, or until the eggs are set and the top is slightly golden. Let it cool for about 5 minutes before slicing.
eat right away or store for future: if you want to meal prep this for breakfast you can keep them in an airtight container and store in the fridge.
reheating: I slice it up and bake in the oven, toaster oven or even the air fryer.
