sweet potato & maple sausage breakfast burritos
maybe it's just me but I love a breakfast that has all the components in one, no assembly needed and portable for all my on-the-go baddies. switched up some of the classic ingredients with a few seasonal fall favorties: sweet potatoes & maple sausage. you could even swap the spinach for kale, which I reccomend, and actually was my intention but was being two cheap that week. this recipe is enough for 4 burritos, you can make a batch for family and friends or my personal favorite: meal prep them for the week.

meal prep storing & reheating
if you are meal prepping these use my storage and reheating tips for the best outcome!
storing
I wrap each breakfast burrito individually in aluminum foil. if you are only meal prepping for the week, they stay best in fridge. if you are doubling up the recipe, you can store them in the freezer.
reheating
my favorite way to reheat them is to remove them from the aluminum foil and add to the air fryer for 8-10 minutes. if you do not hav an air fryer, toaster oven or regular oven work too!
