freezer stock meal prep: make eating easier

the kids are home for the summer & I do not want to play lunch lady all day. so I need to spend sometime prepping some easy reheat and eat items that they can prepare themselves. and to make sure all my hard work actually gets eaten, I am choosing homemade versions of the items they know and love + making options for each meal to minimize boredom.

each friday I sit down for 30 minutes and plan my meals for the week, including a coldfoam, breakfast and lunch for myself, and 4-5 dinners and silly little treat for the whole family. and then I write my grocery list!


this is essential because it not only makes a week of cooking at home easier, it also means less decisions during the busy work week & staying on budget (most times)

here is a list of all the tools you'll need or want to complete this meal prep


  • immersion blender or electric whisk

  • sheets pans (4 if possible, if not 2 will work)

  • large skillet

  • large mixing bowl

  • parchament paper

  • uncrustable press

  • plastic yogurt tubes

  • tall glass jar (coldfoam)

  • paper lunch bags

  • snack boxes (or 4 jars/tupperware)




meal prep step by step guide

don't worry bestie, I am going to walk you through this entire meal prep step by step! and I made sure to add them in expandable lists to hopefully help with the scroll and make things easier to navigate.



step one: cook bacon

  1. preheat oven for 400

  2. place parchament paper on two sheet pans

  3. lay out raw bacon evenly across the sheet pan

  4. bake for 12-15 minutes, until crispy




step two: prep egg patties


  1. in large bowl, crack 12 eggs and add in 1/2 cup milk and mix

  2. in a parchament lined baking dish, add in kale (optional)

  3. pour eggs in next until it's about 1 inch thick

  4. place baking sheet on a sheet pan

  5. place sheet pan in the oven, then pour water gently onto the sheet pan to create a water bath

  6. bake for 15 -18 minutes until fully cooked



step three: make french toast sticks


  1. crack 5 eggs into a shallow dish

  2. add in 1/8 cup milk and mix

  3. set up station: grab butter, a skillet and the egg mixture and place in an area near the stove

  4. add butter to skillet on medium low

  5. dip french toast bread into the egg mixture

  6. place in skillet, and flip the bread until it is brown on both sides

  7. set aside and repeat until all the bread is cooked

  8. let cool



step four: make pizza bagels

  1. split bagels in half and lay out on parchament paper

  2. spoon pizza sauce over each bagel slice

  3. sprinkle with mozzarella cheese and then top with pepperonis & pickled jalapeno slices


step 5: cut & store french toast sticks

  1. once the french toast sticks cooled, slice each piece in 4 sticks

  2. store in freezer safe bag in the freezer


step 6: assemble & pack toaster waffle breakfast sandwiches

  1. remove egg bites with parchament paper from baking dish

  2. cut th egg patties into even squares

  3. lay out frozen toaster waffles on parchament paper

  4. on half the toaster waffles, add egg patties and one slice of bacon split in half

  5. on the other half of the toaster waffles, add slice of cheese

  6. close sandwiches and store in freezer safe paper bags


step 7: make pb & j uncrustables

  1. lay out slices of bread on parchament paper

  2. on one half of the bread, add peanut butter

  3. on the other half of the bread, spread jam

  4. close sandwiches & place in the uncrustable cutter

  5. push down to cut sandwiches into uncrustables

  6. pack away in freezer safe paper bags

  7. store in the freezer


step 8: pack & store pizza bagels

  1. let pizza bagels cool

  2. pack away in freezer safe bags - store in the freezer



step 9: make blueberry muffin coldfoam

  1. in a food processor or blender, add 1 blueberry muffin and 3/4 cup of milk

  2. blend until all mixed together

  3. strain all the liquid into a glass jar

  4. add in 1 cup of heavy cream

  5. blend until thick

  6. store in the fridge covered for 3-5 days


step 10: make yogurt tubes

  1. make mango smoothie: in a food processor, add 2 1/2 cup frozen mango + 1/2 - 1 cup coconut water. blend until smooth. pour into a bowl and clean blender or food processor

  2. make blueberry creme smoothie: in a food processor, add 2 cups frozen blueberries + 2 cups vanilla yogurt. blend until smooth

  3. using a measuring cup or a pastry bag, pipe smoothies into the plastic yogurt tubes

  4. store in the freezer



step 11: prep & pack veggie snack boxes

  1. in a food processor or blender, add 1 blueberry muffin and 3/4 cup of milk

  2. blend until all mixed together

blueberry muffin coldfoam

i am the type of person that will blend an entire muffin in milk and be shocked & surprised when the coldfoam tastes exactly like a blueberry muffin. and that is exactly what happens when I make this coldfoam. I am never beating the allegations of making the most insane coldfoams ever, because this is UNREAL.



ingredients

  • 1 blueberry muffin

  • 3/4 cup milk

  • 1 cup heavy cream


recipe


  1. in a food processor or blender, add 1 blueberry muffin and 3/4 cup of milk

  2. blend until all mixed together

  3. strain all the liquid into a glass jar

  4. add in 1 cup of heavy cream

  5. blend until thick

  6. store in the fridge covered for 3-5 days


toaster waffle breakfast sandwich

in constant disbelief that more people don't use toaster waffles to make breakfast sandwiches more! it's just a combo that feels so right

  • bagels (6)

  • pizza sauce

  • shredded mozzarella cheese

  • peanut butter

  • jelly of choice


recipe:

  1. lay out slices of bread on parchament paper

  2. on one half of the bread, add peanut butter

  3. on the other half of the bread, spread jam

  4. close sandwiches & place in the uncrustable cutter

  5. push down to cut sandwiches into uncrustables

  6. pack away in freezer safe paper bags

  7. store in the freezer


mango & blueberry creme yogurt pops


  1. make mango smoothie: in a food processor, add 2 1/2 cup frozen mango + 1/2 - 1 cup coconut water. blend until smooth. pour into a bowl and clean blender or food processor

  2. make blueberry creme smoothie: in a food processor, add 2 cups frozen blueberries + 2 cups vanilla yogurt. blend until smooth
