meal prep party: making eating easier

all my besties see the benefits of meal prepping but don't have the bandwidth to get it done every week. and I totally get it: planning, shopping and prepping is not the easiest. and since I am on a mission to make taking care of yourself easier and more fun so I thought why not meal prep with your besties.
I like to call it a meal prep party: where 4 beautiful babess get together to meal prep, sharing the workload and making an excuse to YAP for an hour because let's be real it's not much more effort to cook for one person vs cooking for four. especially with 6 extra hands in the kitchen, right?

breakfast: chicken jalapeno popper breakfast pocket with raspberry dip
lunch: green olive zatar dense bean salad
silly little treat: peanut butter & jelly cereal date bars
as someone who has followed a ton of recipes before.

the lore of the meal plan
each friday I sit down for 30 minutes and plan my meals for the week, including a coldfoam, breakfast and lunch for myself, and 4-5 dinners and silly little treat for the whole family. and then I write my grocery list!
this is essential because it not only makes a week of cooking at home easier, it also means less decisions during the busy work week & staying on budget (most times)

helpful hint!
after my friends and I planned the menu, we created a shared notes app on our phones to be sure we didn't miss anything.
our notes included:
kitchen tools we needed (I got that all outlined for you below)
tupperware or storage needed
each person then went through the note and put their name by any tools or ingredients they may have already had and would bring :) this turned out to be such a good idea because each of us could refer back to it the day of and make sure we grabbed everything we needed.

step one: prep chicken and roast with poblano & jalapeno peppers
preheat oven to 400
add raw chicken & peppers to a parchament lined sheet pan
rub down with oil, salt, pepper and garlic powder
add to oven for 20-30 minutes, until cooked all the way through
step two: drain and wash beans
open all cans of beans
pour into a strainer to drain
rinse with water
set aside for when bestie #2 is done prepping the bean salad components
step three: dice lavish pocket components
peel poblano peppers & chop
dice jalapeno peppers
dice chicken into small pieces
bestie #2
prep & mix dense bean salad ingredients:
finely chop onion, garlic, parsley, olives & artichokes
place in a large bowl mixing bowl
once bestie #1 has drained all the beans, add them to the mixing bowl with the chopped ingredients
add in juice from 2 tb avocado oil, 1 whole lemon, salt, pepper, garlic powder and za'atar and mix together
portion out into 4 tupperware containers and cover and store in the fridge
mix & make lavish bread pockets
bestie #1 can also help if they have time
in a large mixing bowl: add 3 blocks of softened cream cheese, chicken, peppers, and 1 8oz bag of shredded cheddar cheese
add in salt, pepper and garlic powder
mix until well combined
cut lavish bread in half
on a sheet of aluminum foil add piece of lavish bread
place 1 large scoop of filling mixture in the middle of the bread
fold opposite sides together, then fold the other opposit sides together
wrap aluminum foil around the pocket
continue until you use all the filling

prep & make cereal date bars
slicing dates in half and placing down on parchament lined sheet pan in a rectangle formation
place sheet of parchament over the dates and use a rolling pin to flaten them out into the base of the bars
melt peanut butter for 3-45 seconds in microwave and pour over the dates
place in the fridge for 10 minutes
spread jam on top of peanut butter layer
top with a hefty amount of cereal
place back in the fridge for 10 minutes
melt chocolate chips with 2 tb of coconut oil, starting with 1 minute in the microwave and 30 second intervals after that stirring in between
top cereal bar mixture with melted chocolate
sprinkle with flakey salt
place back in the fridge for 10 minutes
cut into squares and store in tupperware with parchament paper laid out
bestie #4
place cream cheese blocks out to soften a bit
make coffee syrup:
in a small pot, add 1/4 cup coldbrew or espresso, 1/4 water and 1/2 cup sugar
bring to a simmer and stir until sugar is all dissolved
set aside to cool
make raspberry greek yogurt and/or cottage cheese dip
add greek yogurt to a bowl (and cottage cheese to a seperate bowl if making both varieties)
add in 1 cup of jam (to each)
mix until incorporated
divide and store into 4 seperate jars
make tiramisu coldfoam
add 2 cup heavy cream to a large bowl
add 1 container of mascapone, 1/8 cup coffee syrup & 2 tb cocoa powder
mix until thick
seperate into 4 jars and cover

tiramisu coldfoam
this might be one of my favorite coldfoam flavors - and I didn't even have to blend a whole piece of tiramisu to make it happen.
ingredients
1/4 cup coldbrew or espresso
1/4 cup water
1/2 cup sugar
2 cups heavy cream
8 oz marscapone
1/8 cup cocoa powder
recipe
make coffee syrup
in a small pot, add 1/4 cup coldbrew or espresso, 1/4 water and 1/2 cup sugar
bring to a simmer and stir until sugar is all dissolved
set aside to cool
make coldfoam
add 2 cup heavy cream to a large bowl
add 1 container of mascapone, 1/8 cup coffee syrup & 2 tb cocoa powder
mix until thick
seperate into 4 jars and cover
breakfast: chicken jalapeno lavish pocket with raspberry greek yogurt or cottage cheese dip
skipping starbucks and attempting their chicken jalapeno lavish pocket on our own. not your typical breakfast but this spicy little breakfast pairs so well with the raspberry dip: we made a greek yogurt & cottage cheese version so everyone could get what they want.
chicken jalapeno lavish pockets
preheat oven to 400

cannelini beans (4 cans)

garlic cloves (3)
lemon (1)
italian parlsey
2 can green olives
1 can artichokes
2 tb avocado oil
salt + pepper
garlic powder
za'atar seasoning
recipe

not only is this an easy no bake dessert, the combo is seriously killer delicious.

jam (1 jar)

1 bag chocolate chips
2 tb coconut oil
flakey salt
