I am on a personal mission to show as many people as possible how meal prep doesn't have to be boring. so I switched up my typical shopping list and designed a meal prep using all of my favorite items from Trader Joes. I may be a little bit biased but I think I slapped with this one and surprisingly enough it was one of the quickest meal preps I have ever done.
cook time: 90 min to 2 hours
grocery budget: $72
difficulty: seasoned beginner
this week's menu
coldfoam: chocolate babka coldfoam
breakfast: truffle toaster waffle breakfast sandwiches
lunch: naan pizzas with brie, fig, proscuitto and arugula, balasmic drizzle
silly little treat: candy salad
as someone who has followed a ton of recipes before.
I hate having to scroll to find what I am looking for,
so before we get into things let me offer you a spot to jump to a specific part,

BONUS things I grabbed for dinner too!

meal plan & grocery list
we both don't need to write a grocery list and I already wrote one, so feel free to steal mine please.
the lore of the meal plan
each friday I sit down for 30 minutes and plan my meals for the week, including a coldfoam, breakfast and lunch for myself, and 4-5 dinners and silly little treat for the whole family. and then I write my grocery list!
this is essential because it not only makes a week of cooking at home easier, it also means less decisions during the busy work week & staying on budget (most times)
grocery list
I wrote down literally everything you'll need for this meal prep
download the grocery list below and get to shopping!

meal prep step by step guide
don't worry bestie, I am going to walk you through this entire meal prep step by step! and I made sure to add them in expandable lists to hopefully help with the scroll and make things easier to navigate. if you prefer to watch the FULL 5 minute tutorial: click here
step 1: cook bacon
my first instinct is to always get something in the oven first before diving into prep, I like to use the time while this first thing is cooking to chop and prep the remaining ingredients.
preheat oven to 400 degrees F
add 4 slices of bacon to a parchament lined baking sheet
bake for 12-15 minutes or until full cooked
now you're ready to move to step 2...
step 2: prep & cook arugula egg patties
starting the components of the breakfast sandwiches is the next step.
crack 1 dozen eggs in a large bowl
add 1/4 cup milk of choice & mix together
in a parchament lined baking dish - add 1 handful of arugla and pour egg mixture over it
season eggs with salt and pepper
place baking dish on sheet pan and place in the oven
pour water into the sheet pan, until it's 1/2 way filled
bake in the oven for 12 -15 minutes
be sure to keep your timers straight! If you don't have two timers, you can wait to put the bacon in until the eggs are prepped OR wait for the bacon to finish before adding the eggs.
step 3: mix candy salad
while the bacon & egg patties are cooking & cooling let's quickly prep the candy salad
add all your favorite candies to a bowl
shake or mix anything together
store covered in the pantry for the week
step 4: prep naan pizza ingredients
these naan make the BEST pizzas, they are even shaped like a piece of pizza.
thinly slice heirloom tomatoes
slice brie into small squares
rip proscuitto slices into small pieces
add garlic naan to a parchament lined baking sheet
step 5: assemble naan pizzas
now that we have all the ingredients prepped, it's time to assemble the naan pizzas!
spread fig butter on the naan like the sauce
add heirloom tomatoe slices
top with proscuitto pieces & sliced brie and pieces of basil
add piece of parchament paper to the top of the pizzas, then wrap in aluminum foil
step 6: assemble breakfast sandwiches
cut egg patties into 4 pieces, you can use the toaster waffle to measure
lay out parchament paper and toaster waffles
spread truffle mayo on 4 of the toaster waffles, then add cheese
on the other 4 toaster waffles, add egg patties and one slice of bacon broken in 2 halves
assemble sandwich and wrap individually in aluminum foil or parchament paper
step 7: make coldfoam
slice 1 large babka slice
add it to a blender with 1 cup of milk
blend until mixed together
strain babka out of the milk
add.1 cup of heavy cream to milk mixture
add to a jar and store in the fridge
step 8: silly little drink time
you did it! you meal prepped and did a kick ass job. now it's time to reward yourself with a silly little drink.
