chocolate cherry granola

the test of a good granola is honestly if you just enjoy eating it by the handful and this chocolate cherry granola is just that. don't get me wrong, I also love it as a yogurt bowl or just like a cereal with milk :) added dark chocolate and cocoa powder so it's not too sweet, textures are on point with the chopped almonds and it has three different cherry components: homemade cherry syrup, keeping the cherries in the syrup & adding some dried cherries once it's all baked up. it took me 3 trials to get it right, but it was worth the effort.

chocolate cherry granola

makes: 6 -8 tacos


Ingredients:


cherry syrup

  • 1/2 cup sugar

  • 1/2 cup water

  • 1 cup frozen cherries


granola

  • 2 cups oats

  • 1 tb cocoa powder

  • 1/2 tsp salt

  • 1/2 cup coconut oil


granola add ins

  • 1/2 cup dried cherries

  • 1/2 cup dark chocolate chips (I prefer the mini chips)

  • 1/2 cup chopped almonds



tools


  • sheet pan

  • medium-large mixing bowl

  • parchament paper

  • tall mason jar with top



chocolate cherry granola

recipe


  1. preheat oven 350

  2. make cherry syrup:

    1. add 1/2 cup sugar, 1/2 cup water & 1 cup frozen cherries into a small pot or saucepan.

    2. bring to a simmer and stir until sugar is dissolved.

    3. let simmer on medium low for 5-10 minutes until cherries are soft and syrup is on the thicker side

    4. set aside and let cool

  3. in a medium to large size mixing bowl - add all remaining ingredients & cherry syrup and mix until blended

  4. spread out granola mixture on a parchament lined baking sheet

  5. bake in the oven: 10-12 minutes for chewy granola or 12-14 minutes for crispy granola

  6. let cool

  7. add in all granola add ins: chocolate chips, dried cherries & chopped almonds

  8. store in a covered jar in the toppings

i am a big fan of a yogurt bowl for breakfast, it's sorta like a morning ice cream sundae. I added my favorite granola to a bowl with a little bit of coldbrew. once that's good and mixed in I'll add the chocolate cherry granola & fresh blackberries from behind my house. I love that it's not overly sweet and has the perfect combination of textures.
