cherry tiramisu: a very euro summer silly little treat šāļø

dreaming of a euro summer ? me too babes! but in this economy it's not possible for everyone (me included, wah) so to cope I will be eating this cherry tiramisu in my swimsuit next to kiddie pool in my back yard, just trying to feel something/anything.
this cherry tiramisu is juicy, creamy, sweet-but-not-too-sweet, and somehow still tastes like vacation. no baking required. no tempering. just you, a bowl of cherries, and some light espresso-fueled delusion.
makes: 6-8 servings
skill level: easy ish
prep time: 25 minutes
cook time: no cooking required

INGREDIENTS
lady fingersĀ (store-bought, because we are not baking when itās 82°F at 9am)
½ cup espresso, cold brew, or iced coffee
3 egg yolksĀ
2 tubs mascarponeĀ (usually around 8 oz, full fat obviously)
1/2 cup powdered sugarĀ
1 tsp of vanilla extractĀ
1½ to 2 cups cherries, pittedĀ
cocoa powder for dustingĀ
how to build your euro summer fantasy silly little treat
i'm cherry-ing you on bestie!
whip it (real good):Ā In a bowl or a kitchenaid mixer. whisk the egg yolks with the powdered sugar and vanilla until itās pale and fluffy and looks like something youād trust to be delicious. fold in the mascarpone. donāt overmix. Sheās soft and sensitive.
cherry situation:Ā pit and chop your cherries (or leave them halved if youāre feeling rustic). you can smash a few for juicy drama.
dip and layer:Ā quickly dip your lady fingers in the coffeeādo not soakĀ unless you want mushy sadnessāand layer them in your dish. top with a healthy swipe of your mascarpone fluff, then a generous spoonful of cherries.
repeat:Ā another layer of dipped lady fingers, another dollop of mascarpone, more cherries. You can do two or three layers depending on your pan or your need for decadence.
dust & chill: finish with a dramatic snowfall of cocoa powder and let it chill in the fridge for at least 2 hours (overnight if you have restraint, but like⦠do you?).
