smashed greek inspired chicken tacos with cucumber feta salad & tzatziki

i love when a banger of a recipe is also a meal prep star! these smashed greek inspired chicken tacos are great to make for dinner and/or meal prep a bunch to keep in the fridge (or freezer) for a quick lunch. the cucumber feta salad is perfect because it is the perfect mix of all the toppings you would want on this taco, already mixed up and ready to through on top with a little tzatiki drizzle to throw it all together for an amazing juicy bite.

smashed greek chicken tacos with cucumber feta salad & tzatiki

makes: 6 -8 tacos


Ingredients:


smashed chicken tacos

  • 6-8 fajita size flour tortilla

  • 1 lb ground chicken

  • 1/4 cup panko bread crumbs

  • 1tb dijon mustard

  • 1 egg

  • garlic powder

  • smoked paprika

  • dill (dried or fresh)

  • salt + pepper


cucumber feta salad

  • 1/2 english cucumber

  • 1/4 onion (diced small)

  • 1/2 pint cherry tomatoes

  • dill (fresh)

  • feta cheese (I prefer the block)

  • olive or avocado oil

  • 1/2 lemon

  • salt + pepper

  • garlic powder


tzatiki

  • 1/4 english cucumber (grated)

  • 1/2 cup plain greek yogurt

  • 1/2 lemon

  • fresh dill

  • salt + pepper

  • garlic powder


tools


  • sautee pan

  • parchament paper

  • small jar with top

  • small-medium size bowl with top or jar

smashed greek chicken tacos

ingredients

  • 6-8 fajita size flour tortilla

  • 1 lb ground chicken

  • 1/4 cup panko bread crumbs

  • 1tb dijon mustard

  • 1 egg

  • garlic powder

  • smoked paprika

  • dill (dried or fresh)

  • salt + pepper


  1. mix 1lb of ground chicken with 1 egg, 1/4 cup panko breadcrumbs, 1tb dijon mustard fresh dill, salt, pepper and garlic powder

  2. add a portion of the chicken mixture and smash it to the flour tortillas

  3. cook face down in the skillet until cooked all the way through and golden brown. once cooked, add to parchament paper and begin cooking the next one

ingredients

  • 1/2 english cucumber

  • 1/4 onion (diced small)

  • 1/2 pint cherry tomatoes

  • dill (fresh)

  • feta cheese (I prefer the block)

  • olive or avocado oil

  • 1/2 lemon

  • salt + pepper

  • garlic powder


  1. cut english cucumbers, the cherry tomatoes & onion into small pieces

  2. add all chopped items to a medium size bowl

  3. crumble in feta cheese

  4. add 2 tb oil, juice of 1 lemon, salt pepper and garlic powder and fresh dill

  5. mix until all incorporated and store seperaetly

ingredients

  • 1/4 english cucumber (grated)

  • 1/2 cup plain greek yogurt

  • 1/2 lemon

  • fresh dill

  • salt + pepper

  • garlic powder


  1. grate the cucumber and then use a paper towel to remove the extra moisture

  2. add everything to a small jar and mix together


storing & reheating

if you are making this recipe for meal prep you will need to know about storing and reheating.


I love to prep these for lunch for the week. I place them between parchament paper stacking them up and once they cool, I put them in a ziploc bag or tupperware and store them in the fridge. however if you wanted to prep a larger amount and store them in the freezer, I would store them the same way.


reheating: I place them in the air fryer for 5 minutes or you can re-sautee them on the skillet if you prefer.
