lemon bar cookies: my favorite summer dessert turned cookie

from the first sunny spring day (and it was probably fake spring, but I was in denial) I want to start bringing out the summer recipes. and for me that is always a lemony kind of dessert - I could basically bathe in lemon curd and so I wanted to create a cookie that matched one of my most favorite dessert: lemon bars.


and I am confident I did just that. this cookie is buttery and it only took 5 tries to make sure I really packed in the lemon. unlike lemons other yellow fruit friend, the banana, it does not become the star of the show flavor wise. so I really wanted to make sure the lemon came through.

lemon bar cookies - dreaming of summer silly little treat

makes: 8-10 cookies


time to make your new favorite cookies :)


Ingredients:


  • 1/2 cup butter (1 stick softened)

  • 1 lemon (zested and juiced)

  • 1 cup of granulated sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • 1/2 tsp baking soda

  • 1 3/4 cup flour

  • 4 graham crackers

  • 3/4 cup - 1 cup lemon curd: you can certainly use store bought but if you prefer to make from scratch, I love Ina Garten's lemon curd recipe

  • 1/2 cup white chocolate chips

  • baking sheet

  • parchament paper

  • cookie scooper (optional, a spoon works too)

  • mixer (optional but helpful)




Instructions:


  1. put butter out to soften

  2. spread lemon curd on 1 graham cracker, stack a second graham cracker, add lemon cird again and repeat until all 4 graham crackers are stacked.

  3. add graham cracker stack to food processor and blend until crumbs. pour crumbs in to a bowl to use later

  4. preheat oven to 350

  5. zest 1 lemon & mix with 1 cup of granulated sugar

  6. in a mixer or large bowl blend sugar + 1 stick of softened butter

  7. once well blended, add in 1 egg and 1 tsp vanilla extract and mix

  8. add in 1/4 tsp baking powder, 1/4 tsp salt & 1/2 tsp baking soda and mix

  9. add in 1 cup of flour and mix

  10. once incorporated into a dough, add in 1/2 cup white chocolate chips and mix in.

  11. on a parchament lined baking sheet, scoop cookie dough out and add to baking sheet with space between each cookie.

  12. use your hand to push down the cookie dough balls and top with lemon curd, then graham cracker crumbs

  13. bake for 10-11 minutes

  14. let cool for 10-20 minutes before eating

I made this recipe 7 times before perfecting it and it typically doesn't take me that many times but I wanted just the right amount of textures and lemon flavor. after including it as the silly little treat in my meal prep and wanted to try a few different things I decided I was going to batch out a few differnt versions and hand them out to my neighbors and friends. one of my neighbors actually tried all four different kinds and ended up picking the same one I thought was the best, #4!
