These little pockets of heaven take all the best parts of a caramel apple—warm spices, juicy apples, buttery pastry—and turn them into a cozy dessert that you can enjoy without the stickiness getting all up in your business.

INGREDIENTS
4-5 apples
1 box frozen pastry dough (2 sheets)
cinnamon
caramel sauce (or you can certainly make it yourself)

a fancy fall or holiday silly little treat in 3 easy steps that isn't pumpkin spice.
thaw the pastry dough: First things first, take those frozen sheets of dough out of the freezer and let them thaw for about 30 minutes. You'll want them soft enough to roll out without cracking but still cold enough to puff up gloriously in the oven.
preheat your oven: Set it to 375°F A hot oven is key to getting that pastry golden and flaky.
prep the apples: While your dough is thawing, peel and slice your apples thinly. Think enough slices to cover a tart, but not so much that your tart turns into an apple skyscraper. Toss the slices in a bowl with a sprinkle of cinnamon. (Seriously, go to town here—cinnamon is basically the taste of cozy.)
cut the pastry: Once thawed, roll out your pastry sheets slightly and cut them into squares or rectangles. These will be your tart bases. No need to get too fancy—rustic is in.
assemble the tarts: Lay your apple slices in a shingled pattern across the dough, leaving a little border around the edges. feel free to dust with a little more cinnamon.
bake to golden perfection: Pop those babies in the oven and bake for 20-25 minutes, or until the pastry is puffed up and golden brown, and the apples are soft.
drizzle with more caramel: As soon as the tarts come out of the oven, drizzle more caramel sauce on top.
You can serve these tarts at a party, or store in the fridge and heat up in toaster oven for breakfast or a weekly silly little treat.
